Research helps identify, by aroma, mangoes with internal collapse disorder
Scientists find volatile compounds that serve as indicators of the problem
The IV National Competition for Quality and Sustainability of Special Cocoa in Brazil, which selects the best almonds produced in the country, has extended registration until August 15th. The total value of the prizes was also readjusted and now amounts to R$50, which will be divided between first, second and third placed in two categories: varietal (a single genetic variety of cocoa) and blend (mixture of varieties). The producer who participates in this edition also competes for one of the classification places for the international competition, in Paris, Cocoa of Excellence (CoEx). To do this, the samples must be among the eight with the highest scores in the sensory evaluation. This selection process is coordinated by a national committee led by the Executive Committee of the Cocoa Farming Plan (Ceplac). The evaluation includes analysis of the physical-chemical aspects of the beans, in addition to stages of sensory analysis, such as tasting the cocoa in the form of liquor (cocoa mass) and also a blind evaluation of the flavor of the cocoa in the form of 70% chocolate. The winners will be announced during a ceremony on November 25th in Belém do Pará.
The National Competition for Quality and Sustainability of Special Cocoa in Brazil seeks to strengthen Brazilian cocoa farming, valuing and recognizing producers who do differentiated work, as well as encouraging sustainability throughout the production process. The award is a joint initiative of the cocoa chain, sponsored by the Secretariat of Agricultural and Fisheries Development of the State of Pará (SEDAP-PA)/FUNCACAU, Mondelez - Cocoa Life, Nestlé - Cocoa Plan, the Association of Cocoa Processing Industries ( AIPC), Cacau Show, Dengo Chocolates, SENAR-BA, Gencau and Harald, and organized by the Cocoa Innovation Center (CIC) in partnership with Ceplac.
