In the production of specialty coffees, every detail makes a difference — and it is precisely in this meticulous attention that coffee mapping becomes a strategic and essential tool. Combining technical knowledge with sensory sensitivity, this practice allows the true potential of the beans to be identified at their origin, contributing to more assertive decisions by producers and to the appreciation of coffees in the market.
With the aim of promoting quality and revealing the differences in coffees from the Cerrado Mineiro Region, Expocacer (Cooperativa dos Cafeicultores do Cerrado LTDA) began mapping the coffees of its members, a free initiative exclusive to associated producers.
The action is led by a highly specialized team to provide producers with technical information to help them make the best decisions when choosing the post-harvest process. During the process, cooperative members have the opportunity to witness the batch tests in person and receive feedback in real time, deepening their knowledge about the coffee itself and its strengths.

“In addition to identifying the potential of coffees and helping cooperative members make decisions, mapping helps prevent a coffee with a good beverage from being mixed with an inferior one, taking into account the sensitivity of the crop to variations in the environment and climate — which can cause differences even within a single plot,” highlights Angélica Mara, Q-Grader and Specialty Coffees Classifier at Expocacer.
In line with innovations in the specialty market, Expocacer will adopt new protocols for evaluating coffees, such as the CVA (Coffee Value Assessment) from the SCA (Specialty Coffee Association). This methodology is based on “the value of coffee” considering the attributes that make up sensory, affective and extrinsic analysis with an emphasis on sustainability and other attributes that align with the supply of coffee to meet specific markets. The objective of the tool is to provide a better understanding of the potential value of coffee at different stages of the production chain, considering aspects such as quality, origin, sustainability and market.
Each member can send up to 5 samples per appointment and the service will be carried out at two strategic points:
Patrocínio-MG (Expocacer administrative headquarters): Tuesdays and Thursdays, starting at 14 pm, at the address: Av. Faria Pereira, nº 3945 – Industrial District
Patos de Minas-MG (Expocacer unit): Wednesdays, from 14 pm - Address: Av. Rodrigo Castilho de Avelar, 1100 - Ground Floor, Industrial District I
Coffee mapping goes beyond sensory evaluation; it also involves the expertise of professionals such as business agents and traders, who help sell coffee to markets around the world. By bringing together these areas — technical, sensory and commercial — Expocacer has been ensuring a comprehensive support model for cooperative members, allowing for more accurate decision-making regarding post-harvest, processing and commercial direction of the lots.
This gives producers the opportunity to identify high value-added coffees, assist their members in successful processes in future harvests, avoid losses due to inadequate grain mixing and increase their financial return by positioning their coffees in the most demanding markets.
